AL CANEVON AZ AGR SS : Land Tradition Culture, 40 years of passion in winemaking

Al Canevon is a family-run business founded in 1970, located in the heart of the Prosecco Superiore Conegliano Valdobbiadene Docg, a UNESCO World Heritage Site.

The Vineyard

Its uniqueness is demonstrated by the 40 hectares of land that are totally planted with glera and are all located on a single plot in Collalbrigo. Additionally, there are vineyards in Valdobbiadene.

The stunning beauty of the hills of Conegliano Valdobbiadene Docg is distinguished to the south by the Adriatic Sea and to the north by the Prealps; this location ensures a temperate environment, provided by constant ventilation and the right amount of rainfall, which has a favorable effect on the grape cultivation, making them distinctive.

The Al Canevon winery is situated in the Prosecco-producing region of Valdobbiadene and Conegliano, surrounded by the beautiful Valdobbiadene and Conegliano hills. He devotes himself to the cultivation of the 40 hectares of property in this beautiful place every day, with great care and devotion.

The first wine produced dates back to 1940, the naturally fermented sparkling wine, also called “El vin del nono”, produced by grandfather Giuseppe (Bepi for friends), who used the natural fermentation technique made on yeasts.

Even today this wine continues to be produced with pride by the company which has dedicated the label to “Nono Bepi”.

In 2001 the era of sparkling wine began.

The production of our wines fully respects the disciplinary that regulates the sparkling method of Prosecco Superiore di Conegliano-Valdobbiadene Docg.

The harvest, carried out entirely by hand, makes use of the plastic boxes “Bins” transported in refrigerated trucks from the countryside to the cellar, to ensure that the quality of the bunches just picked remains unaltered.

Once in the cellar, the grapes are subjected to soft pressing, an operation made using special machinery capable of gently squeezing the berries and thus obtaining only the first flower, the must which will then act as the basis for our Prosecco Docg.

Then follows the decantation, phase in which the cloudy must is left to rest cold (5-10 ° C) in steel tanks.

The sparkling process takes place in the Italian method called charmat, recognized today as the “Conegliano-Valdobbiadene method”, and involves the use of pressure-tight autoclaves in which the wine is combined with sugar and yeast in order to preserve the original aromas of the grapes. and thus to obtain that fruity and floral scent that distinguishes Prosecco Valdobbiadene Docg from any other sparkling wine.

40 days later the bottling takes place, the wine is thus ready to be placed on the market for its consumption.

Conegliano Valdobbiadene

The Consortium for the Protection of Prosecco di Conegliano Valdobbiadene, of which the Al Canevon winery is a member, ensures and protects the maximum expression of the Prosecco area. This is the only way to safeguard the Denomination of Controlled and Guaranteed Origin (DOCG), the highest degree of Italian quality, and the world-famous “Italian bubbles.”

Al Canevon wines are known all over the world and have received prizes in the most authoritative and prestigious wine contests on a national and international level, thanks to oenological insight, continual commitment, and proficiency in grape selection, all topped off with a harvest done totally by hand.

Straw-colored wine, tending to greenish and impeccable in clarity. It has an intense aroma of apple and pear of the finest quality. It is sweet and fresh, lean and light in alcohol. Thanks to its versatility, it can open and close a meal and brighten up any moment of the day.

The character of the vine dictates that only the most precious part of grapes coming from vines that give a few clusters per vine, after a complete ripening is destined for this wine. It adapts well to any type of culinary combination, especially risotto and cold cuts.

Straw-colored wine, limpid, with a continuous perlage. It has a persistent perfume richer with a hint of citrus, it is sweet and fresh. It is an elegant wine. Accompanies fish and shellfish dishes or delicate white meats. It should be served fresh.

Rocky in depth and crumbly on the surface, this soil gives the grapes a marked acidity, balanced by natural sugars, preserved and enhanced by manual harvesting.

Straw-colored wine with a persistent perlage. Fruity and floral, there is a marked hint of fruit (golden apple) and wisteria flowers. Fresh and harmonious. It can accompany sweet cheeses or delicate pates.
