Could you please tell us the story of your winery, when it was created and how it developed decades after decades ?
Olivier Jullien tought to Vincent Guizard how to vinify (98-99). From 2003 to 2010 Vincent,Partner of Frédéric Pourtalié, led Domaine de Montcalmès to the level of the Best Languedoc Wines. The 31th of october 2010 he leaft Montcalmès with his 6 hectares of vines (that is got in own property) to create Domaine Saint Sylvestre with his wife Sophie. “Finess to take for exemple in Languedoc for both red and white. Domaine installed in few times at the best level of the area. (Bettane et Desseauve)
What sort of wines are youproducing ?
We produce top of the lines wines, the red are ageing24 months in barrel by grappe variety and by plot, the white are vinify in oak and ageing 12 months in the same oak.
How important are your export distribution compared to national distribution ?
We export around 25% of our production througout 10 countries in the world.
What sort of distributors are your customers ?
We work with importers, Cavistes, private customer and more than 70th stars restaurants.
Why your wines are different from other wineries in your area ?
We work at really low yields (make a manual disbudding and green harvest where we let only 3 to 5 grapes depended of the grape variety to have a 20 hl/ha), vinify with the wild yeast of the berries without using industrial yeast, without enzyme addition, without pesticides. We work depended of the moon, the red are not filtered and not fine. We have the particularity in the vines to replace died trunck each years by the wild rootstock (American rootstock) that will be graft y Vincent 2 or 3 years later with the appropriate grape variety. Than we prefer that the plant develop fist its root in a really plebe terroir to have nice grapes after.
Do you produce grapes in a organic or environmental friendly method, or with general methods ?
We’re not organic, but we work with product that are using for organic production (sulfur, copper,manure natural), depended of the moon.
Are your wines already distributed in Asia, and if not what are the countries you are looking for new distributors ?
