Interview of Mr. Thibault Roch   –  Export Manager – DOMAINE DU CHARDONNAY for AsiaImportNews – Exclusive

Could you please tell us the story of your winery, when it was created and how it developed decades after decades ?

The Domaine Du Chardonnay has typical Burgundy history. In 1987 three Winemaker (Etienne Boileau, William Nahan, Christian Simon) decided to join there vineyard, material and knowledge to create one estate. This how the Domaine Du Chardonnay had borned.

They decide to focus only one Chablis wines and decade after decade they focus on improving the quality and add more vineyard. This how today, we run 38 hectares on Petit Chablis, Chablis and also five different Chablis 1er Cru (Vaillons, Montmains, Vosgros, Montée De Tonnerre, Mont de Milieu).

The interesting facts it’s  the vineyard of Chablis is divided by the “Serein” River, who divided the Left Bank and the Right Bank. The Domaine Du Chardonnay is located on a hold water mill, on the heart of Chablis, and between those two bank who make totally change the perception of wines.

What sort of wines are you producing ?

We produce seven appellation of Chablis. Our main objective is to show the Terroir and the Minerality of our soil. We produce: Petit Chablis, Chablis, Chablis Premier Cru (Vaillons, Montmains, Vosgros, Mont De Milieu, Montée De Tonnerre). As typical Chablis, our range is vinified without oak, on this way we keep the purity and the minerality. We call Chablis wine “Rock Juice”.

How important are your export distribution compared to national distribution ?

We do 50% on the French Market and 50% on Export Market.  We have a high demand in France.

What sort of distributors are your customers ?

Our main distribution channel is on restaurant and wine shop. We also work with some big and famous store as “Le Bon Marché” in Paris, or “Lafayette Gourmet” in Berlin. Our distribution depends on the country. Each importer decides of the distribution channel.

Why your wines are different from other wineries in your area ?

Burgundian people are humble; we don’t compete with other winery. The interesting fact is on our large range. You can taste different Premier Cru all around Chablis with exactly the same winemaking process. We think it’s the best way to discover the difference and the terroir of each appellation. This way you will discover that some vine very close can make a wine with a total different style. This why Burgundy is magical!

Do you produce grapes in a organic or environmental friendly method, or with general methods ?

We are not under any organic label. We minimize the use of product and we are often on a famous French Magazine (Vin & Santé) who mean Wine&Health to have 0% of residual chemical product. (www.vins-et-sante.com). We love and we take care of our soil and vineyard, so we protect them.

Are your wines already distributed in Asia, and if not what are the countries you are looking for new distributors ?

We are doing great sell in Japan, South Korea and Singapore. We are currently looking to be present in China, Vietnam, Thailand, Cambodia, Philippines.

Is there anything who want to add about your wines, story or any news ?

Years after years, we do our best to improve quality. We follow this on our reward list, and we was proud to got 91 points from Parker on all our Chablis 1er Cru from the left bank (Vaillons, Vosgros, Montmains).
